Truffle Base
- 300 grams (about 10.5 oz) white chocolate, chopped
- 150 ml (about 2/3 cup) heavy cream
- 1 teaspoon vanilla extract
Coating
- About 1/2 cup cocoa powder, for dusting
- 1/2 cup chopped nuts (such as almonds or hazelnuts), for coating
- Melting the White Chocolate: Place the chopped white chocolate in a heatproof bowl set over a simmering saucepan of water, stirring gently until the chocolate is fully melted and smooth.
- Mixing in the Cream: Warm the heavy cream slightly, pour it over the melted chocolate, and let it sit for a minute. Then stir carefully until the mixture is perfectly smooth and combined. Stir in the vanilla extract.
- Chilling the Mixture: Cover the bowl tightly with plastic wrap and refrigerate the chocolate mixture for about two hours, or until it is firm enough to scoop and shape.
- Forming the Truffles: Using a cookie scoop or small spoon, scoop out small portions of the chilled mixture and roll them quickly between your hands to form smooth balls. Place them on a baking sheet lined with parchment paper.
- Coating the Truffles: Roll each truffle first in cocoa powder, then in the chopped nuts, ensuring they are thoroughly coated. Arrange them on the baking sheet and refrigerate for another 30 minutes to allow the truffles to set firmly before serving or storing.
Notes
- Use good quality white chocolate for the best flavor and texture.
- If you prefer a less sweet coating, you can skip the nuts and just use cocoa powder or powdered sugar.
- The truffles should be kept refrigerated and consumed within one week.
- You can experiment with different coatings such as shredded coconut or colored sprinkles.
