Ingredients

Scale

Meat and Vegetables

  • 1 pound ground beef
  • 1 small onion, chopped finely

Seasoning and Sauces

  • 1 package taco seasoning
  • ½ cup water
  • ½ cup sour cream

Canned Goods

  • 1 can black beans (15 ounces), drained and rinsed
  • 1 can diced tomatoes with green chiles (10 ounces)

Chips and Cheese

  • 1 bag Fritos corn chips (9.25 ounces)
  • 2 cups Mexican-style shredded cheese

Toppings

  • Green onions, sliced
  • Additional sour cream
  • Guacamole
  • Salsa
  • Jalapenos

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and spray a 13×9 inch baking dish with nonstick cooking spray to prevent sticking.
  2. Cook Beef and Onions: In a large skillet, brown the ground beef until it is almost cooked through. Add the chopped onions and cook until they soften and the beef is no longer pink.
  3. Add Seasoning: Stir in the taco seasoning package along with ½ cup water, then bring the mixture to a boil while stirring occasionally.
  4. Mix Beans and Tomatoes: Reduce the heat and stir in the drained black beans, the diced tomatoes with green chiles, and ½ cup sour cream. Simmer for 8-10 minutes until the mixture is heated through and slightly thickened.
  5. Layer the Casserole: Spread a single layer of Fritos corn chips in the bottom of the prepared baking dish. Sprinkle 1 cup of shredded cheese evenly over the chips. Then add the beef and bean mixture on top, followed by the remaining 1 cup of shredded cheese.
  6. Bake Covered: Cover the dish with foil and bake in the preheated oven for 15 minutes.
  7. Bake Uncovered: Remove the foil and continue baking for an additional 5 minutes, or until the cheese melts and the casserole bubbles around the edges.
  8. Add Toppings: Remove the casserole from the oven. Top with extra Fritos corn chips and your favorite toppings such as sliced green onions, sour cream, guacamole, salsa, and jalapenos before serving.

Notes

  • You can substitute ground turkey or chicken for a lighter option.
  • For extra heat, add diced jalapenos inside the casserole before baking.
  • Use fat-free sour cream to reduce calories and fat content.
  • To keep chips crunchy longer, add extra chips as a topping just before serving instead of layering too many in the casserole.
  • If preferred, swap Fritos for tortilla chips.
