Brownie Batter
- 1/2 cup all-purpose flour
- 1/4 cup plus 2 tablespoons unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 1/8 teaspoon kosher salt
- 1 cup granulated sugar
- 1/2 cup salted butter, softened
- 1 teaspoon vanilla extract
- 2 large eggs
Topping
- 5 ounces melting chocolate (Ghirardelli Dark or Milk wafers, or Wilton wafers)
- Additional melting wafers in red, pink or white
- Valentine Sprinkles
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Cut an 8×12 inch piece of parchment paper and line an 8×8 inch baking pan, creating a sling to easily lift the brownies out after baking. Spray the parchment with cooking spray and set aside.
- Mix Dry Ingredients: In a small bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and kosher salt until well combined. Set this mixture aside.
- Cream Butter and Sugar: In a large mixing bowl, beat the softened salted butter, granulated sugar, and vanilla extract together either by hand or with a hand mixer until just combined, creating a creamy mixture.
- Add Eggs: Add the eggs one at a time to the butter mixture, beating gently after each addition. Be careful not to overmix to maintain a tender texture.
- Combine Batter: Gradually add the dry flour mixture to the wet ingredients, stirring or beating gently until the ingredients are just combined and form a smooth batter.
- Bake: Pour the batter into the prepared pan, smoothing out the top with a spatula. Bake in the preheated oven for 22-25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs attached.
- Cool and Cut: Allow the brownies to cool completely in the pan. Use the parchment sling to lift the brownies out and place on a cutting board. Cut into 1-inch squares to form brownie bites.
- Melt Chocolate and Decorate: Melt the chocolate wafers according to package directions. Line a cookie sheet with parchment or wax paper. Drizzle the melted chocolate over the brownie bites as desired and immediately sprinkle with Valentine sprinkles. Transfer to a clean parchment paper to allow the chocolate topping to harden and set.
Notes
- Ensure the butter is softened but not melted for the best texture.
- Do not overbeat the batter once eggs are added to avoid tough brownies.
- The parchment sling makes removing the brownies from the pan easy and helps keep their shape.
- Feel free to customize the toppings with different colored sprinkles or chocolate types according to the occasion.
- Store brownie bites in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
