Instructions

  1. Prepare the Cauliflower: Chop the cauliflower head into bite-sized pieces to ensure even cooking and easy blending later.
  2. Sauté Onion and Garlic: Heat the olive oil or butter in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Cook Cauliflower with Broth: Add the chopped cauliflower to the pot and stir to combine. Pour in the vegetable or chicken broth, making sure the cauliflower is fully submerged. Bring to a boil, then reduce the heat and simmer for 20 to 25 minutes, or until the cauliflower is very tender.
  4. Blend the Soup: Use an immersion blender directly in the pot to puree the soup until smooth and creamy. Alternatively, transfer the soup in batches to a blender and puree. Return the blended soup to the pot if needed.
