4.9 from 57 reviews

Sprinkle Cookies are delightful and colorful sugar cookies loaded with vibrant jimmies sprinkles. These buttery, soft cookies have a tender crumb thanks to cream cheese and butter in the dough, making them irresistibly soft inside with just a slight crisp edge. The dough is rolled into balls, coated in sprinkles, flattened, and baked to perfection. Perfect for celebrations or a fun treat any day.

Ingredients

Scale

Dry Ingredients

  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¾ teaspoon salt

Wet Ingredients

  • ½ cup unsalted butter, cubed and cold
  • ½ cup (4 ounces) cream cheese, cold
  • 1 large egg
  • 2 teaspoons pure vanilla extract

Sugars

  • ½ cup granulated sugar
  • ¾ cup powdered sugar

Coating

  • 1 cup jimmies sprinkles

Instructions

  1. Preheat Oven and Prepare Pans: Preheat your oven to 375°F (190°C). Line baking pans with silicone baking mats or parchment paper to prevent sticking and set them aside.
  2. Mix Dry Ingredients: In the bowl of a food processor, combine the all-purpose flour, baking soda, baking powder, and salt. Pulse a few times to evenly blend the dry ingredients together.
  3. Add Cold Butter, Cream Cheese, and Sugars: Add the cold cubed butter and cold cream cheese to the flour mixture along with granulated sugar and powdered sugar. Pulse until the mixture achieves a sandy texture, indicating the fats are well incorporated.
  4. Add Egg and Vanilla: Add the egg and pure vanilla extract to the processor and blend until the dough just comes together, forming a cohesive ball.
  5. Shape Dough with Sprinkles: Roll the dough into 1 ½ tablespoon-sized balls. Roll each ball into the bowl of jimmies sprinkles evenly coating the surface.
  6. Arrange and Flatten Cookies: Place the sprinkle-coated dough balls on the prepared baking pans spacing them 1-2 inches apart. Use the bottom of a glass to gently flatten each cookie to about ¼ to ½ inch thick.
  7. Bake: Bake in the preheated oven for 8 to 10 minutes. The cookies should look slightly underbaked, which helps maintain a soft texture when cooled.
  8. Cool and Finish: Let the cookies rest for 2 minutes on the baking pans. If the cookies appear puffy, gently press them down again using the bottom of a glass during this cooling period. Then transfer cookies to a wire rack to cool completely before serving.

Notes

  • Ensure the butter and cream cheese are cold when mixing to achieve the perfect crumbly, sandy texture before adding the egg.
  • Do not overbake the cookies; slightly underbaked cookies remain soft and chewy after cooling.
  • Press flattened cookies gently after baking if they puff up to get the classic sprinkle cookie shape.
  • You can substitute jimmies sprinkles with any colorful sugar sprinkles of your choice.
  • Store cookies in an airtight container at room temperature for up to 5 days to maintain freshness.
