Ingredients

Scale

Chicken

  • 1 pound chicken breast (4 x 4 ounce chicken breasts)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Filling

  • 4 ounces cream cheese (softened)
  • 1/4 cup parmesan cheese (grated)
  • 1 tablespoon mayonnaise
  • 2 cups spinach (chopped)
  • 2 cloves garlic (minced)

Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C) to prepare for baking the chicken.
  2. Prepare spinach and cheese: Wash and chop the spinach leaves. Grate the parmesan cheese if not pre-grated and combine in a bowl.
  3. Make filling mixture: In a small bowl, mix the softened cream cheese, grated parmesan, mayonnaise, chopped spinach, and minced garlic until thoroughly combined. Set aside.
  4. Slice chicken pockets: Carefully slice a pocket into each chicken breast, ensuring not to cut all the way through, creating space for the filling.
  5. Season chicken: Drizzle olive oil evenly over the chicken breasts. In a small bowl, combine smoked paprika, salt, garlic powder, and onion powder. Sprinkle and rub this spice mixture over both sides of each chicken breast.
  6. Stuff chicken breasts: Fill each chicken breast pocket generously with the spinach and cheese mixture prepared earlier.
  7. Bake chicken: Place the stuffed chicken breasts in a baking dish and bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (74°C) indicating they are fully cooked.

Notes

  • Ensure not to overfill the chicken breasts to prevent the filling from leaking during baking.
  • You can substitute mayonnaise with Greek yogurt for a lighter option.
  • Use fresh spinach for better flavor and texture; if using frozen, thaw and drain well.
  • Rest the chicken for 5 minutes after baking to retain juices and enhance flavor.
  • Check chicken temperature with a meat thermometer for safety.
