Filling
- 1 cup fresh spinach, chopped (or frozen, thoroughly drained)
- ½ cup feta cheese, crumbled
- ¼ cup cream cheese, softened
- 1 tablespoon olive oil
- 1 clove garlic, minced
- ¼ teaspoon dried oregano
- Salt and pepper to taste
Puff Pastry
- 1 sheet of puff pastry (store-bought or homemade)
- 1 egg, beaten (for egg wash)
- Prepare the Spinach Filling: Heat olive oil in a pan over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in the chopped spinach and cook until wilted or until all moisture has evaporated if using frozen spinach. Remove from heat and allow to cool completely.
- Mix the Cheese Blend: In a mixing bowl, combine the cooled spinach, crumbled feta, softened cream cheese, dried oregano, salt, and pepper. Mix thoroughly until well blended into a creamy filling.
- Assemble the Twists: Lightly flour a surface and unroll the puff pastry sheet. Spread the spinach and cheese mixture evenly over one half of the pastry. Fold the other half over the filling to create a rectangle, then gently press down along the edges to seal the filling inside.
- Cut & Twist: Use a sharp knife or pizza cutter to slice the folded pastry into 1-inch wide strips. Hold both ends of each strip and gently twist several times to create the spiral shape. Place the twists on a parchment-lined baking sheet, spacing them apart.
- Egg Wash & Bake: Brush each pastry twist lightly with the beaten egg to ensure a glossy, golden finish. Preheat the oven to 375°F (190°C) and bake the twists for 15 to 20 minutes, or until they have puffed up and turned golden brown. Remove from oven and let cool slightly before serving.
Notes
- For a vegetarian option, use vegetarian-approved feta or substitute with another cheese.
- You can prepare the spinach filling a day ahead to save time.
- If using frozen spinach, ensure it is thoroughly drained to avoid soggy pastry.
- Serve warm as an appetizer or snack alongside dips or salads.
- Leftover twists can be stored in an airtight container and reheated in the oven for crispiness.
