Ingredients

Scale

Beef Marinade

  • 1 lb flank steak or ribeye, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tsp gochujang (Korean chili paste)
  • 0.5 tsp black pepper
  • 1 tsp rice vinegar

Noodle Sauce

  • 1 tbsp gochujang
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp chili flakes
  • 1 tsp sugar
  • 1 tsp minced garlic

Creamy Garlic Sauce

  • 3 tbsp mayonnaise
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • 1 clove garlic, finely minced
  • Pinch of salt
  • 1 to 2 tbsp warm water (to thin)

Others

  • 2 portions Korean-style ramen noodles
  • 2 tbsp chopped green onions
  • 0.5 tsp toasted sesame seeds

Instructions

  1. Marinate Beef: In a mixing bowl, combine 2 tbsp soy sauce, 1 tbsp sesame oil, 1 tbsp brown sugar, 2 cloves minced garlic, 1 tsp grated ginger, 1 tsp gochujang, 0.5 tsp black pepper, and 1 tsp rice vinegar. Add the thinly sliced flank steak or ribeye and mix well to coat. Marinate for at least 30 minutes, preferably overnight, to allow the flavors to infuse the meat.
  2. Prepare Creamy Garlic Sauce: Whisk together 3 tbsp mayonnaise, 1 tsp sesame oil, 1 tsp rice vinegar, finely minced 1 clove garlic, and a pinch of salt in a small bowl. Add 1 to 2 tbsp warm water gradually to adjust until the sauce reaches a drizzleable consistency. Chill the sauce until ready to use.
  3. Cook Noodles: Bring a large pot of water to a boil. Add the Korean-style ramen noodles and cook according to package instructions until al dente, usually about 3-4 minutes. Drain the noodles and rinse with cool water to stop the cooking process and remove excess starch.
  4. Grill Beef: Heat a grill pan or skillet over medium-high heat. Remove beef from marinade and cook in batches if necessary. Grill beef slices for 1–2 minutes per side until nicely charred and cooked through. Set aside.
  5. Toss Noodles with Sauce: In a bowl, mix 1 tbsp gochujang, 1 tbsp soy sauce, 1 tbsp sesame oil, 1 tsp chili flakes, 1 tsp sugar, and 1 tsp minced garlic until well combined. Add the cooked noodles and toss thoroughly until evenly coated. Optionally, warm the sauced noodles briefly in a skillet to heat through.
  6. Assemble and Serve: Divide the sauced noodles into serving bowls. Top each bowl with grilled beef slices, a drizzle of the creamy garlic sauce, sprinkle with 2 tbsp chopped green onions and 0.5 tsp toasted sesame seeds. Serve immediately while hot.

Notes

  • For best results, marinate beef overnight to maximize flavor.
  • Use thinly sliced beef to ensure quick grilling and tender bites.
  • Adjust the amount of chili flakes and gochujang according to your spice preference.
  • The creamy garlic sauce can be made ahead and stored in the fridge for up to 2 days.
  • If Korean-style ramen noodles are unavailable, substitute with any fresh or dried ramen noodles.
  • Serve immediately after assembling to enjoy the perfect texture of noodles and tender beef.
