Cupcake Ingredients

  • 1 1/3 cup oat flour (certified gluten-free) or gluten-free all-purpose flour (or regular flour)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice
  • pinch of cloves
  • 1/2 cup butter, melted (or coconut oil or dairy-free butter alternative)
  • 1/2 cup brown sugar
  • 1/3 cup applesauce (sweetened or unsweetened)
  • 1/2 cup apple cider
  • 1 tsp vanilla extract
  • 2 eggs

Spiced Buttercream Frosting Ingredients

  • 1/2 cup butter, softened
  • 12 tbsp water, milk or more apple cider
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • pinch of nutmeg
  • 2 cups powdered sugar
  • 1 tbsp apple cider (plus extra as needed)

Instructions

  1. Prepare Dry Ingredients: In a small mixing bowl, combine oat flour, baking powder, salt, cinnamon, nutmeg, allspice, and cloves. Stir together until well mixed.
  2. Cream Wet Ingredients: In a large mixing bowl, cream together the melted butter and brown sugar using a hand mixer until smooth. Add applesauce, apple cider, and vanilla extract, mixing well to combine.
  3. Add Eggs: Beat in eggs one at a time, continuing to mix for about a minute until fully incorporated.
  4. Combine Batter: Gradually add the dry ingredients into the wet mixture, stirring until you achieve a smooth batter without lumps.
  5. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a cupcake pan with liners and spray lightly with non-stick spray.
  6. Fill Cupcake Liners and Bake: Fill the cupcake liners about three-quarters full with batter. Bake for 18-22 minutes, or until the tops are springy to the touch and a toothpick inserted in the center comes out clean.
  7. Make Spiced Buttercream Frosting: In a large bowl, beat the softened butter, 1 tablespoon apple cider, vanilla extract, cinnamon, and nutmeg until smooth and creamy.
  8. Add Powdered Sugar: Mix in 1 cup of powdered sugar with the butter mixture until combined. Then add the remaining cup of powdered sugar and beat until the frosting is fluffy and smooth. If the frosting is too thick, add additional apple cider (or water/milk) one tablespoon at a time until desired consistency is reached.
  9. Frost Cupcakes and Serve: Once cupcakes are completely cooled, spread the spiced buttercream frosting generously on top. Optionally, decorate with sprinkles or a dusting of cinnamon sugar. Enjoy your delicious autumn treat!

Notes

  • Oat flour is naturally gluten-free but make sure to use certified gluten-free oat flour if you require gluten-free baking.
  • You can substitute regular all-purpose flour if gluten is not a concern.
  • Adjust the spices according to your taste preference, increasing or decreasing cinnamon or nutmeg as desired.
  • For a dairy-free version, use coconut oil or a plant-based butter alternative in both cupcake and frosting recipes.
  • If the frosting becomes too runny, chill it briefly in the refrigerator to firm up before frosting the cupcakes.
  • Store cupcakes in an airtight container at room temperature for up to 2 days, or refrigerate for up to 5 days.
