  • 1 1/2 teaspoons salt (or more to taste)
  • 1 1/2 teaspoons oregano
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon pepper

Instructions

  1. Season the Chicken: Begin by seasoning the sliced chicken breasts with salt and pepper to taste, ensuring every piece is well-coated for maximum flavor.
  2. Add Ingredients to Slow Cooker: Place the seasoned chicken, sliced bell peppers, sliced onion, diced tomatoes or salsa, and fajita seasoning blend into your slow cooker. Stir everything to combine well.
  3. Cook in Slow Cooker: Set the slow cooker to HIGH and cook for 2-3 hours, or set it to LOW and cook for 4-6 hours until the chicken is cooked through and tender.
  4. Optional Instant Pot Sauté: If using an Instant Pot, turn it on to sauté mode. Once hot, add oil, onions, and bell peppers, cooking for 3-5 minutes until soft.
  5. Add Remaining Ingredients to Instant Pot: Season the chicken with salt and pepper. Add the chicken, chicken broth, diced tomatoes, and all seasonings to the Instant Pot. Stir to combine well.
  6. Pressure Cook in Instant Pot: Close the Instant Pot lid and seal the valve. Set to high pressure and cook for 8 minutes. When finished, perform a quick release of the pressure.
