These festive Pumpkin Marshmallow Lollipops are a delightful Halloween treat combining the creamy sweetness of marshmallows with pumpkin puree and crispy texture from Rice Krispies. Coated in chocolate or caramel and sprinkled with fun edible decorations, they make perfect party favors or seasonal snacks that are visually appealing and delicious.

Ingredients

Main Ingredients

  • Large marshmallows – 20 pieces
  • Pure pumpkin puree (canned or fresh) – 1/2 cup
  • Orange food coloring – 3 to 5 drops
  • Green food coloring – 1 to 2 drops (optional for pumpkin stems)
  • Rice Krispies cereal – 1 cup
  • Lollipop sticks – 20 pieces

For Decorating

  • Chocolate melts or caramel melts – 1 cup
  • Sprinkles or edible glitter – 2 tablespoons (optional)
  • Halloween-themed cupcake liners or wraps – as needed

Instructions

  1. Melt the marshmallows: Place the large marshmallows in a microwave-safe bowl and heat them in 30-second intervals, stirring well after each until completely melted and smooth.
  2. Mix in pumpkin puree and food coloring: Stir in the pumpkin puree thoroughly with the melted marshmallows. Add 3 to 5 drops of orange food coloring to achieve a vibrant pumpkin color, mixing well to combine evenly.
  3. Add Rice Krispies for texture: Fold in the Rice Krispies cereal carefully to incorporate texture without crushing the cereal completely. Allow the mixture to cool for a few minutes until it is comfortable to handle.
  4. Shape the pumpkin lollipops: Grease your hands lightly or prepare a parchment-lined work surface. Pinch off small portions of the mixture and shape into mini pumpkin-like balls. Gently insert a lollipop stick into each one to form the lollipops.
  5. Decorate with melts and sprinkles: Melt chocolate or caramel melts according to package instructions. Dip the tops of each lollipop into the melted coating, then immediately decorate with sprinkles, edible glitter, or candy pumpkins for a festive touch. Set each lollipop onto parchment paper to cool and harden.

Notes

  • For a stronger pumpkin flavor, use fresh pumpkin puree and consider adding a pinch of pumpkin pie spice.
  • If the mixture becomes too sticky to handle, refrigerate it for 10-15 minutes to firm up slightly before shaping.
  • Use gloves or lightly oil your hands to prevent sticking when shaping the pumpkin balls.
  • Store lollipops in an airtight container at room temperature for up to 3 days.
  • Green food coloring can be used to tint small portions of the mixture to create pumpkin stems or for decorative details.
  • For a gluten-free option, ensure Rice Krispies or cereal used is certified gluten-free.
