Pumpkin Layer

  • 3.4 oz box instant vanilla pudding
  • 12 oz can evaporated milk
  • 15 oz can pure pumpkin
  • 1½ tsp pumpkin pie spice

Topping

  • Remaining whipped topping from above (about 2 cups)
  • ¼ cup pecans, chopped

Instructions

  1. Prepare the crust: In a small bowl, mix together graham cracker crumbs, granulated sugar, and melted butter until well combined. Pour the mixture evenly into a 9×13 inch baking dish and press firmly to form an even crust layer.
  2. Make the cheesecake layer: Using a mixer, beat the softened cream cheese and powdered sugar on high speed until smooth and well combined. Gradually beat in 1½ cups of whipped topping on medium speed until the mixture is fluffy and evenly blended.
  3. Assemble the cheesecake layer: Spread the cream cheese mixture evenly over the prepared graham cracker crust. Place the dish in the refrigerator to chill while you prepare the next layer.
  4. Prepare the pumpkin layer: In a mixing bowl, beat the instant vanilla pudding mix with evaporated milk until thickened according to package instructions. Stir in the pure pumpkin and pumpkin pie spice until fully combined.
  5. Fold in whipped topping: Gently fold ½ cup of the remaining whipped topping into the pumpkin mixture to lighten the texture, then spread this pumpkin layer evenly over the chilled cheesecake layer.
