Sausage and Bacon
- 1 pound smoked sausage or kielbasa sausage, cut into ¾ inch chunks
- 12 ounce thick cut bacon, cut in half strips
Cheese Mixture
- 4 ounce cream cheese, room temperature
- ¼ cup sour cream
- 1 jalapeno, stem and seeds removed, diced
- ½ cup sharp cheddar cheese
- ½ teaspoon Slap Ya Mama seasoning
Honey BBQ Glaze
- ¼ cup BBQ sauce (any brand)
- ⅛ cup honey
- 1 ½ teaspoon brown sugar
Garnish
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the pig shots.
- Make Honey BBQ Sauce: In a small bowl, combine the BBQ sauce, honey, and brown sugar. Stir well until the mixture is smooth and set aside.
- Prepare Sausages: Cut the bacon strips in half. Wrap each chunk of smoked sausage with a half-strip of bacon, securing with a toothpick if needed.
- Arrange in Pan: Place the bacon-wrapped sausages upright into a muffin pan or arrange them on a baking sheet with toothpicks holding them together.
- Mix Cheese Topping: In a medium bowl, mix together the cream cheese, sour cream, diced jalapeno, sharp cheddar cheese, and Slap Ya Mama seasoning until fully combined and creamy.
- Pipe Cheese Mixture: Transfer the cheese mixture into a quart-sized plastic bag, clipping a corner to use as a piping bag. Squeeze the cheese topping onto the top of each bacon-wrapped sausage.
- Add Jalapeno Garnish: Place a slice of jalapeno on top of the cheese mixture for extra heat and flavor.
- Brush with Glaze: Using a brush, coat each pig shot with the prepared honey BBQ glaze evenly to add sweetness and tanginess.
- Bake: Bake the pig shots in the preheated oven for 40-45 minutes, or until the bacon is crispy and cooked through.
- Serve: Carefully remove the pig shots from the oven and let them cool slightly before serving. Enjoy your delicious appetizers!
Notes
- Use toothpicks to secure the bacon around the sausage if it unravels.
- Adjust jalapeno quantity depending on desired spice level.
- Can be served warm or at room temperature.
- For extra crispiness, broil for 1-2 minutes at the end of baking but watch carefully to prevent burning.
- Store leftovers in an airtight container in the refrigerator up to 3 days and reheat before serving.
