  • One 8-ounce sheet store-bought puff pastry (thawed, but chilled)
  • 1 tablespoon water
  • ¼ cup granulated white sugar
  • Extra granulated white sugar, for baking

Instructions

  1. Prepare baking tray and workspace: Line a baking tray with parchment paper and set aside. Place a piece of parchment paper about 10×10 inches on a clean work surface.
  2. Brush pastry with water: Use a pastry brush to lightly brush the water evenly over the surface of the thawed puff pastry sheet. This will help the sugar adhere to the dough.
  3. Sprinkle and press sugar: Evenly sprinkle half of the granulated sugar over the pastry surface. Use a rolling pin to lightly press the sugar into the dough for better adherence and texture.
  4. Fold sides inward: Fold the left and right sides of the pastry inwards so that they meet precisely in the center. Then, sprinkle the remaining sugar over the folded pastry and again use the rolling pin to press the sugar lightly into the dough.
  5. Repeat folding: Fold the left and right sides inward again to meet in the center, and then fold the entire pastry in half lengthwise to form a tight log.
  6. Chill the pastry log: Wrap the pastry log tightly in plastic wrap and refrigerate for 30 minutes to firm up, making it easier to slice.
  7. Preheat the oven: Preheat your oven to 400°F (200°C) to prepare for baking.
  8. Slice the pastry: Remove the pastry log from the refrigerator and place it on a cutting board. Using a very sharp knife, cut the log into approximately 20 slices, each about ½-inch thick. Place the slices flat on the prepared baking tray, spacing them about 2 inches apart. Sprinkle a small pinch of sugar on top of each cookie.
  9. Bake the cookies: Bake the cookies for 10 minutes, then flip each one over carefully. Continue baking for an additional 5 to 7 minutes, or until the cookies are golden brown and crispy. Watch carefully in the last minutes to prevent burning, as they can quickly scorch.
