Ingredients

Scale

Fries

  • 2 large Russet Potatoes, peeled and sliced into fry shapes about 1/2” thick
  • 1 tablespoon avocado oil or olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon nutritional yeast (optional, for flavor)

Special Sauce

  • 1/3 cup paleo mayo (homemade or purchased)
  • 1 tablespoon Dijon mustard
  • 3 tablespoons ketchup
  • 1 tablespoon dill pickle relish (or chopped dill pickles)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Bacon and Beef

  • 6 slices paleo friendly bacon (no sugar added for Whole30)
  • 1 lb ground beef (80% lean grass fed beef)
  • 1/2 teaspoon sea salt (or to taste)
  • Large pinch black pepper (or to taste)
  • 1/2 teaspoon garlic powder

Bowls

  • 4 cups greens of choice (hearts of romaine used)
  • 1 cup cherry tomatoes, halved or sliced
  • 1 medium purple onion, thinly sliced
  • Sliced dill pickles (no sugar added for Whole30, as desired)
  • 1 large avocado or two small avocados

Instructions

  1. Prepare and Roast the Fries: Preheat your oven to 425°F and line two baking sheets with parchment paper. Toss the sliced potatoes in the oil and season with sea salt, black pepper, garlic powder, and nutritional yeast if using. Spread the fries out on one baking sheet ensuring they do not touch each other to promote crispiness. Roast in the oven for about 30 minutes until golden brown and crisp.
  2. Cook the Bacon: Place the bacon slices on the second prepared baking sheet and bake in the same oven for 16-20 minutes or until cooked to your preference. Alternatively, you can pan fry the bacon in a large skillet until crisp.
  3. Make the Special Sauce: While the fries and bacon cook, whisk together paleo mayo, Dijon mustard, ketchup, dill pickle relish, garlic powder, and onion powder in a small bowl until well combined. Set aside.
  4. Cook the Beef: Heat a large skillet over medium-high heat with a drizzle of oil. Add the ground beef and season with sea salt, black pepper, and garlic powder. Cook, stirring and breaking up lumps, for 2-3 minutes until browned and cooked through.
  5. Assemble the Burger Bowls: Divide the greens among 4-6 bowls. Top with cherry tomatoes, sliced onions, dill pickles, cooked ground beef, bacon, and hot fries. Finally, slice the avocado and distribute evenly across the bowls. Drizzle with the special sauce or serve the sauce on the side for dipping. Enjoy your paleo-friendly burger bowls!

Notes

  • For extra crispy fries, ensure slices do not overlap on the baking sheet.
  • You can substitute avocado oil with olive oil or another high-heat oil.
  • Nutritional yeast is optional but adds a nice savory flavor to the fries.
  • Use grass-fed, 80% lean ground beef for best flavor and texture.
  • Adjust seasoning to taste especially sea salt and black pepper.
  • The paleo mayo can be homemade or store-bought to suit your preferences.
  • Bacon cooking time may vary depending on thickness; watch carefully to avoid burning.
