Ingredients

Scale

Chicken

  • 2 skinless, boneless chicken breasts (220g each)
  • Salt and pepper to taste
  • Toothpicks (optional, for securing)

Filling

  • 7 oz sliced mushrooms
  • 2 cups fresh baby spinach
  • 3 oz mozzarella cheese, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • Fresh thyme, to taste (about 1/2 teaspoon)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the stuffed chicken breasts.
  2. Prepare Chicken: Pound the chicken breasts gently to an even thickness to ensure even cooking. Season both sides generously with salt and pepper.
  3. Sauté Vegetables: In a skillet over medium heat, melt the butter with olive oil. Add sliced mushrooms and cook until browned, about 5-7 minutes. Add minced garlic and thyme, cooking for an additional minute until fragrant. Stir in fresh baby spinach and cook until wilted, about 2 minutes.
  4. Mix Filling: Remove the skillet from heat and stir in the sliced mozzarella cheese until it begins to melt and combine with the vegetables, creating a creamy filling.
  5. Stuff Chicken: Spoon the filling onto one half of each chicken breast. Carefully fold the other half over the filling to close. Secure with toothpicks if needed to keep the filling inside during baking.
  6. Bake: Place the stuffed chicken breasts in a baking dish and bake in the preheated oven for 20 minutes, or until the internal temperature reaches 165°F (74°C) ensuring the chicken is fully cooked.

Notes

  • You can substitute mozzarella with provolone or fontina for a different flavor.
  • Use fresh thyme or substitute with dried thyme if fresh is unavailable.
  • To prevent the chicken from drying out, do not overbake beyond 20 minutes.
  • Let the chicken rest 5 minutes after baking before serving for juicier results.
  • Remove toothpicks before serving.
