Ingredients

Scale

Pastry Dough

  • 1 cup All-purpose flour
  • 1/2 cup Unsalted butter (cold)
  • 23 tbsp Ice-cold water

Filling

  • 4 Eggs
  • 1/2 cup Heavy cream
  • 1 cup Cheese (cheddar or Swiss, mixed varieties optional)
  • 1 cup Vegetables (spinach, bell peppers, or mushrooms, sautéed lightly)
  • Salt and pepper to taste

Instructions

  1. Preparation: Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with cooking spray or butter to prevent sticking.
  2. Make the Pastry Dough: In a mixing bowl, combine the all-purpose flour and cold unsalted butter, cutting the butter into the flour until the mixture resembles coarse crumbs. Add ice-cold water gradually, mixing just until a dough forms. Wrap the dough and chill for 15-20 minutes.
  3. Roll and Line Muffin Cups: On a lightly floured surface, roll out the dough to about 1/8 inch thickness. Cut small rounds to fit the muffin tin cavities. Press dough rounds gently into each muffin cup to form the crust base.
  4. Prepare the Filling: In a large bowl, whisk together the eggs, heavy cream, salt, and pepper until smooth. Chop your choice of sautéed vegetables and cheese, ensuring they are bite-sized for the mini quiches.
  5. Assemble the Quiches: Place about a tablespoon of the chopped vegetables and cheese into each dough-lined muffin cup. Pour the egg and cream mixture over the fillings, filling cups nearly to the top.
  6. Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, until the quiche bites puff up and develop a golden-brown top.
  7. Cool and Serve: Allow the quiche bites to cool slightly for a few minutes before gently removing them from the muffin tin. Serve warm or at room temperature.
