  • Salt and pepper, to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to ensure the casserole doesn’t stick during baking.
  2. Cook the Beef: In a large skillet over medium heat, warm the olive oil and sauté the diced onion for 3 to 4 minutes until softened. Add the minced garlic and cook for an additional 30 seconds to release its aroma. Then, add the ground beef and cook, breaking it up with a spatula, until browned and fully cooked through.
  3. Season and Mix: Drain any excess fat from the skillet. Stir in the taco seasoning, black beans, corn (if using), diced tomatoes with green chiles, and salsa. Allow the mixture to simmer for 5 to 7 minutes so the flavors meld together. Taste and adjust seasoning with salt and pepper if needed.
  4. Layer the Casserole: In the prepared baking dish, start by layering half of the tortillas to cover the bottom. Spread half of the beef mixture evenly over the tortillas, then sprinkle with 1 cup of shredded cheese. Repeat the layers with the remaining tortillas, beef mixture, and finish by topping with the remaining 1 cup of cheese.
