Delicious and spicy Louisiana Voodoo Fries featuring crispy baked fries topped with a creamy, cheesy, and flavorful sauce infused with ranch seasoning and cayenne pepper for a kick of heat. Perfect as a snack or appetizer.

Ingredients

Scale

Fries

  • 26 ounces frozen French fries

Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 2 teaspoons ranch seasoning powder
  • 1/2 teaspoon cayenne powder (divided)
  • 8 ounces white cheddar cheese (shredded)

Instructions

  1. Preheat oven or air fryer: Set your oven or air fryer to 400°F (204°C) to prepare for cooking the fries.
  2. Cook the fries: Arrange the frozen French fries in a single layer either on a baking sheet or in an air fryer basket. Bake or air fry until golden brown and crispy according to the package instructions, usually about 20-25 minutes for the oven, or 15-20 minutes in an air fryer, shaking halfway through.
  3. Make the roux: In a medium saucepan over medium heat, melt the butter. Whisk in the all-purpose flour and cook the mixture for about 2 minutes to remove the raw flour taste, stirring constantly.
  4. Add milk and seasonings: Gradually pour in the milk while whisking continuously to avoid lumps. Stir in salt, ground white pepper, ranch seasoning powder, and half of the cayenne powder (about 1/4 teaspoon) to infuse the sauce with flavor and some heat.
  5. Thicken the sauce: Lower the heat to medium-low and continue cooking the sauce, stirring frequently, until it thickens to a creamy consistency, approximately 5 minutes.
  6. Melt the cheese: Remove the saucepan from heat, then stir in the shredded white cheddar cheese until fully melted and smooth, creating a rich, creamy cheese sauce. Add the remaining cayenne powder if you desire extra spice.
  7. Combine and serve: Pour the warm cheese sauce generously over the hot, crispy fries and serve immediately for a decadent snack or appetizer.

Notes

  • You can use either oven or air fryer for cooking the fries depending on your preference or equipment.
  • Adjust the cayenne pepper to your preferred spice level; add more if you like it hotter.
  • For extra crispiness, toss fries halfway through cooking in the oven or air fryer.
  • Use freshly shredded cheese for better melting and creamier sauce.
  • This recipe pairs well with a side of ranch dressing or hot sauce for dipping.
