Ingredients

Scale

Wet Ingredients

  • 3 eggs, lightly beaten
  • 2/3 cup milk, slightly warmed
  • 3 tbsp butter, melted
  • 1 tsp vanilla extract

Dry Ingredients

  • 1/2 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt

Fruit

  • 4 apples, about 2 lbs (peeled, cored, and thinly sliced)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper or grease it lightly to prevent sticking.
  2. Mix Wet Ingredients: In a mixing bowl, whisk together the lightly beaten eggs, slightly warmed milk, melted butter, and vanilla extract until well combined and smooth.
  3. Add Dry Ingredients: Sift in the flour, powdered sugar, ground cinnamon, baking powder, and salt into the wet mixture. Gently mix until the batter is smooth and fully combined without lumps.
  4. Prepare Apples: Peel, core, and thinly slice the apples. Toss the apple slices into the batter to coat them evenly, ensuring each slice is covered.
  5. Layer Apples and Batter: Arrange a layer of coated apple slices in the bottom of the prepared loaf pan. Pour the remaining batter with coated apples over this layer, distributing evenly.
  6. Bake the Cake: Place the loaf pan in the preheated oven and bake for 50 to 60 minutes, or until the cake turns golden on top and a toothpick inserted in the center comes out clean.
  7. Cool Before Slicing: Remove the cake from the oven and allow it to cool completely in the pan before slicing. This helps the cake set and makes slicing easier and cleaner.

Notes

  • Use tart apple varieties like Granny Smith for a nice balance of sweetness and acidity.
  • Make sure to slice apples thinly for the ‘invisible’ apple texture.
  • Allow the cake to cool completely for best slicing results.
  • Serve plain, or with a dusting of powdered sugar or a dollop of whipped cream for extra indulgence.
