  • 1 onion (peeled and sliced)
  • 3 bell peppers (red, green, and yellow – thickly sliced)

  • ½ cup beef or vegetable stock or water
  • Salt (to taste)

Instructions

  1. Prepare ingredients: Slice the steak into long strips, peel and slice the onion, and thickly slice the red, green, and yellow bell peppers. Measure out the fajita seasoning and stock or water.
  2. Add to Instant Pot: Place the steak strips into the Instant Pot, followed by the sliced onion. If you prefer softer bell peppers, add them now as well. Sprinkle the fajita seasoning over the ingredients and pour in ½ cup of beef or vegetable stock (or water) for cooking liquid. Add salt to taste.
  3. Pressure cook: Secure the Instant Pot lid and set the valve to SEALING. Select the PRESSURE COOK or MANUAL function and set the timer for 10 minutes on high pressure. The Instant Pot will take approximately 6-7 minutes to come to pressure before cooking begins. Once the cook time ends, perform a quick release of the steam by carefully turning the valve to VENTING.
  4. Steam the peppers: If you did not add the bell peppers before cooking, add them now. Replace the lid without sealing and let the peppers sit for a few minutes to steam until slightly tender.
  5. Drain and serve: Remove the lid and use a slotted spoon to lift out the steak and vegetables, allowing excess liquid to drain but reserving some sauce. Discard or set aside the excess cooking liquid. Warm your flour tortillas and stuff them with the fajita filling.
  6. Garnish and enjoy: Garnish the fajitas with chopped cilantro leaves if desired, and drizzle a little of the reserved sauce over the filling for extra flavor before serving.
