Instructions

  1. Cook the Eggs: Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat.
  2. Simmer and Rest: Once boiling, turn off the heat, cover the pan, and let the eggs sit in the hot water for 10–12 minutes to cook through.
  3. Cool and Peel: Drain the hot water and cool the eggs under cold running water. Peel the shells off and chop the eggs into small pieces.
  4. Mix the Base: In a medium mixing bowl, combine mayonnaise, Dijon mustard, hot sauce if using, paprika, garlic powder, onion powder, salt, and black pepper. Stir until well blended.
  5. Combine Eggs and Base: Add the chopped eggs to the bowl and stir gently until the eggs are well coated with the mayonnaise mixture.
  6. Add Cheese and Bacon: Fold in the shredded sharp cheddar cheese and half of the crumbled bacon, mixing until evenly distributed.
  7. Prepare to Bake: Preheat your oven to 350°F (175°C). Grease a baking dish and spread the dip mixture evenly inside.
  8. Bake: Bake the dip uncovered for 15 to 20 minutes, until it’s hot, bubbly, and slightly golden on top.
