Vegetables
- 1 red bell pepper, seeded and finely chopped
- 1 cup finely diced spinach
- 4 green onions, chopped

- Preheat Oven: Heat the oven to 350 degrees F (175 degrees C). Line a 9×9 inch square baking pan with parchment paper, leaving some overhang for easy removal later.
- Sauté Vegetables: Heat oil in a skillet over medium heat. Add the chopped red bell pepper and spinach, cooking for 4-5 minutes until softened. Spread evenly in the bottom of the lined baking pan along with the chopped green onions.
- Cook Sausage: In the same skillet, cook the turkey sausage over medium heat for 3-4 minutes until browned, breaking it up with a wooden spoon. Set aside.
- Prepare Egg Mixture: In a blender, combine the eggs, cottage cheese, flour, garlic powder, and salt. Blend until smooth. Add the grated cheddar cheese and pulse a few times to evenly distribute the cheese.
- Assemble and Bake: Pour the egg mixture into the prepared baking dish over the vegetables. Sprinkle the cooked crumbled sausage evenly on top. Gently stir to evenly distribute the vegetables and sausage. Bake for 35-40 minutes, or until the center is set and firm.
- Cool and Serve: Let the egg bake cool for 15-20 minutes to set fully. Slice into squares and serve warm or store in the refrigerator for later enjoyment.
