Healthy Buckeyes Recipe

4.9 from 103 reviews

A healthy twist on traditional buckeyes, these bite-sized treats combine almond flour, natural peanut butter, and a touch of maple syrup for sweetness. Coated partially in rich melted chocolate, they offer a deliciously satisfying snack that’s gluten-free and perfect for any occasion.

Ingredients

Scale

Dry Ingredients

  • 1 1/3 cup almond flour
  • 1/4 tsp salt (only if peanut butter is unsalted)

Wet Ingredients

  • 1 cup natural peanut butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Mix Ingredients: In a bowl, thoroughly combine almond flour, natural peanut butter, salt (if needed), maple syrup, and vanilla extract until a consistent dough forms.
  2. Shape Buckeyes: Form the mixture into small balls using your hands, then place them on a tray. Refrigerate the balls for 30 minutes to help them firm up.
  3. Melt Chocolate: In a small bowl, melt the chocolate chips with coconut oil by heating in 30-second increments in the microwave, stirring in between until smooth.
  4. Dip Buckeyes: Using a fork, carefully dip each chilled ball into the melted chocolate, covering about two-thirds of the ball. Lift and place them back on the tray. Repeat for all the buckeyes.
  5. Set Buckeyes: Refrigerate the chocolate-dipped balls for at least 15 minutes to allow the chocolate to set firmly.
  6. Store: Keep the buckeyes refrigerated in an airtight container until ready to serve to maintain freshness and texture.

Notes

  • Use natural peanut butter without added sugar for a healthier option.
  • If your peanut butter is salted, omit the additional salt for balanced flavor.
  • For best texture, ensure the buckeyes are well chilled before dipping in chocolate.
  • Store buckeyes in the refrigerator to keep chocolate coating firm and prevent melting.
  • You can substitute maple syrup with honey if preferred, but it may slightly alter the flavor.
