Dry Ingredients
- 1 1/3 cup almond flour
- 1/4 tsp salt (only if peanut butter is unsalted)
Wet Ingredients
- 1 cup natural peanut butter
- 1/4 cup maple syrup
- 1 tsp vanilla extract
Chocolate Coating
- 1 cup chocolate chips
- 1 tsp coconut oil
- Mix Ingredients: In a bowl, thoroughly combine almond flour, natural peanut butter, salt (if needed), maple syrup, and vanilla extract until a consistent dough forms.
- Shape Buckeyes: Form the mixture into small balls using your hands, then place them on a tray. Refrigerate the balls for 30 minutes to help them firm up.
- Melt Chocolate: In a small bowl, melt the chocolate chips with coconut oil by heating in 30-second increments in the microwave, stirring in between until smooth.
- Dip Buckeyes: Using a fork, carefully dip each chilled ball into the melted chocolate, covering about two-thirds of the ball. Lift and place them back on the tray. Repeat for all the buckeyes.
- Set Buckeyes: Refrigerate the chocolate-dipped balls for at least 15 minutes to allow the chocolate to set firmly.
- Store: Keep the buckeyes refrigerated in an airtight container until ready to serve to maintain freshness and texture.
Notes
- Use natural peanut butter without added sugar for a healthier option.
- If your peanut butter is salted, omit the additional salt for balanced flavor.
- For best texture, ensure the buckeyes are well chilled before dipping in chocolate.
- Store buckeyes in the refrigerator to keep chocolate coating firm and prevent melting.
- You can substitute maple syrup with honey if preferred, but it may slightly alter the flavor.
