Bang Bang Sauce

  • ½ cup mayonnaise
  • 3 Tbsp sweet chili sauce
  • ½1 Tbsp sriracha (adjust for spice preference)
  • 1 tsp rice vinegar
  • 2 tsp honey

Instructions

  1. Prep Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey until smooth. Taste and adjust by adding more sriracha for spice or extra honey or sweet chili sauce for sweetness. Chill the sauce until ready to serve.
  2. Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat. Once hot and shimmering, add the ground turkey, breaking it into smaller pieces with a spatula. Cook until the turkey is browned and reaches an internal temperature of 165°F.
  3. Add Seasonings and Simmer: Reduce heat to medium-low. Stir in minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt. Simmer the mixture for 2-3 minutes, stirring occasionally to combine flavors.
  4. Thicken Turkey Mixture: Sprinkle corn starch evenly over the turkey mixture and stir thoroughly to combine and thicken the sauce slightly. Optionally, stir in about 2 tablespoons of the prepared bang bang sauce into the meat mixture for extra flavor before serving.
  5. Assemble Rice Bowls: Layer cooked rice in serving bowls, then add shredded carrots, cucumbers, edamame, pickled onions, avocado slices, shredded cabbage, and the seasoned ground turkey mixture. Drizzle the remaining bang bang sauce over the top and garnish with sliced green onions and sesame seeds. Serve immediately.
