Ingredients

Scale

For the Steak Bites:

  • 1 ½ pounds sirloin steak or ribeye, cut into bite-sized cubes
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon fresh thyme leaves (optional)
  • 1 teaspoon fresh parsley, chopped (for garnish)

For the Creamy Mashed Potatoes:

  • 2 pounds Yukon gold potatoes or russet potatoes, peeled and cut into chunks
  • 4 tablespoons unsalted butter
  • ½ cup whole milk or heavy cream (adjust for desired creaminess)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preparing the Mashed Potatoes: Start by placing the peeled and chopped potatoes into a large pot. Cover them with cold water and add a pinch of salt. Bring everything to a boil over high heat. Once boiling, reduce the heat to medium and let them simmer until very tender, which should take about 15-20 minutes. When they’re done, drain well and return the potatoes to the pot.
  2. Making the Creamy Mash: While the potatoes are still hot, mash them using a potato masher. Add the butter and gradually mix in the milk or cream, depending on how creamy you like your mash. Season with salt and pepper to taste, then cover and keep warm while you prepare the steak bites.
  3. Cooking the Steak Bites: Take your steak cubes and pat them dry with paper towels, then season them generously with salt and pepper. In a large skillet, heat the olive oil over medium-high heat until it’s shimmering.
  4. Searing the Steak: Add the steak cubes in a single layer (do this in batches if needed). Let them cook without moving them for about 2 minutes to achieve a nice sear. Then, stir them around and cook for another 1-2 minutes until they are browned but still juicy on the inside.
  5. Adding the Garlic Butter: Once the steak is cooked, reduce the heat to medium, pushing the steak to one side of the skillet. Add the unsalted butter and minced garlic to the open side. Stir the butter and garlic together, allowing the garlic to soften and the butter to melt. Then, toss the steak bites in the garlic butter mixture until fully coated, which should be about 1 minute.
  6. Finishing Touches: If you like, you can sprinkle fresh thyme leaves over the steak while tossing it in the butter for extra flavor. Once everything is mixed, remove from heat and garnish with chopped parsley.
  7. Serving: Serve your garlic butter steak bites hot, right next to the creamy mashed potatoes. Enjoy this delicious meal with family or friends!

Notes

  • Use a high smoke point oil like olive oil to get a good sear on the steak without burning.
  • Patting the steak dry before cooking helps achieve a better crust.
  • You can substitute whole milk with heavy cream for richer mashed potatoes or use a dairy-free alternative if desired.
  • For herb variations, try rosemary instead of thyme.
  • Make sure not to overcrowd the pan when cooking steak bites to ensure proper searing.
