Ingredients

Scale

Main Ingredients

  • 1 lb lean ground beef (85/15)
  • 1 Tbsp olive oil
  • ½ tsp fine sea salt, or to taste
  • ¼ tsp black pepper, or to taste
  • ½ medium onion, finely diced
  • 1 medium carrot, julienned or coarsely grated
  • 3 garlic cloves, minced
  • 3 cups green cabbage, thinly sliced
  • 1 tsp ground ginger
  • ¼ cup low-sodium soy sauce
  • 2 tsp sesame oil
  • ½ tsp granulated sugar
  • 1 Tbsp chopped green onion (optional, for garnish)
  • ¼ tsp sesame seeds (optional, for garnish)

Instructions

  1. Cook the Ground Beef: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook for about 5 minutes, breaking it apart with a spatula, until browned and no longer pink. Season with salt and pepper to taste.
  2. Cook the Vegetables: Stir in the finely diced onion and julienned or grated carrot. Cook for 5–7 minutes, stirring occasionally, until the onions soften and become translucent.
  3. Add Garlic: Add minced garlic to the skillet and cook for an additional 30 seconds, stirring constantly to prevent burning and to release its aroma.
  4. Sauté Cabbage and Seasonings: Add the thinly sliced green cabbage, ground ginger, low-sodium soy sauce, sesame oil, and granulated sugar. Continue sautéing for 5–7 minutes until the cabbage is tender and slightly wilted, making sure all flavors blend well.
  5. Garnish and Serve: Remove the skillet from heat. Garnish with chopped green onions and sesame seeds if desired. Serve the egg roll in a bowl warm for a delicious and nutritious meal.

  • This dish pairs well with steamed rice or cauliflower rice for a low-carb option.
  • Leftovers store well in the refrigerator for up to 3 days and reheat easily on the stovetop or microwave.
