Instructions

  1. Cook the sausage: Heat olive oil in a large pot over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook until browned and fully cooked, about 6-8 minutes. Remove sausage and set aside, leaving the rendered fat in the pot.
  2. Sauté aromatics: In the same pot, add diced onion, carrots, and celery. Cook until softened, about 5 minutes. Add minced garlic and cook for another 1-2 minutes until fragrant.
  3. Add potatoes and herbs: Stir in diced potatoes, oregano, basil, thyme, salt, and pepper. Cook for 2 minutes to let the herbs release their aromas.
  4. Pour in broth and simmer: Add the chicken broth to the pot. Bring the soup to a boil, then reduce heat and simmer for 20 minutes or until the potatoes are tender.
  5. Return sausage and add cream: Add the cooked sausage back to the pot. Stir in the heavy cream, heat through for 5 more minutes, but do not boil.
