Beef Mixture
- 2 lb lean ground beef (90/10 or 93/7 fat content)
- 1/2 Tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1/2 large yellow onion (finely diced)
- 1/4 cup mayonnaise
Cheese
- 8 slices medium cheddar cheese
- 6 oz medium cheddar (shredded, or use more sliced cheese)
Rolls and Topping
- 24 dinner rolls (or use 2 packs of 12, King’s Hawaiian recommended)
- 2 Tbsp unsalted butter (melted, plus more to grease baking sheet)
- 1 Tbsp sesame seeds
- Preheat and Prepare Pan: Preheat your oven to 350˚F (175°C). Grease the bottom of a large rimmed baking sheet with some melted butter to prevent sticking and add flavor.
- Sauté Onion: Heat 1/2 tablespoon olive oil in a large skillet over medium-high heat. Add the finely diced yellow onion and sauté until softened, about a few minutes.
- Cook Ground Beef: Add 2 pounds of ground beef to the skillet. Break it up with a spatula as it cooks, seasoning with 1 tsp salt, 1 tsp black pepper, and 1 tsp garlic powder. Stir frequently and cook until no pink remains but avoid overcooking.
- Remove Excess Fat: Tilt the skillet to the side and carefully spoon off all excess fat and liquid to prevent soggy sliders.
- Add Mayonnaise: Remove the skillet from heat and stir in 1/4 cup mayonnaise to the cooked beef mixture to add moisture and creamy texture.
