A luscious and elegant Chocolate and Raspberry Mousse combining rich melted chocolate with airy whipped cream and tangy raspberry sauce for a delightful dessert experience.

Ingredients

Scale

Raspberry Layer

  • 1 cup frozen raspberries
  • 2 tbsp caster sugar

Chocolate Mousse

  • 200 g chocolate (dark or milk)
  • 2 eggs
  • ¼ cup brown sugar
  • 1 cup cream, whipped

Instructions

  1. Make the Raspberry Layer: In a small heatproof jug, combine frozen raspberries and caster sugar. Microwave on high for 1 minute, stir, then microwave for another minute. Stir again and refrigerate to cool completely.
  2. Prepare the Chocolate: Finely grate 2 tablespoons of chocolate and set aside for topping. Break the remaining chocolate into pieces and melt in the microwave (about 2 minutes), stirring halfway through. Let cool slightly.
  3. Whisk the Eggs and Sugar: In a stand mixer or with a handheld beater, whisk the eggs and brown sugar for about 2 minutes until pale, thick, and airy.
  4. Combine the Mousse: Gently fold the warm melted chocolate into the egg mixture until just combined. Then fold in the whipped cream until the mousse is smooth and well incorporated.
  5. Assemble the Dessert: Divide the raspberry sauce evenly between 4 serving glasses. Spoon the chocolate mousse over the top to fill each glass. Sprinkle with the reserved grated chocolate.
  6. Chill: Refrigerate for at least 4 hours, or until set. Serve chilled.

Notes

  • Use dark chocolate for a richer flavor or milk chocolate for a sweeter taste.
  • Ensure the melted chocolate is not too hot when folding into the eggs to avoid cooking them.
  • Whip the cream to soft peaks for best texture.
  • Can be prepared a day ahead for convenience.
  • To make it gluten-free, check the sugar for any additives if sensitive.
