For the Chicken Kofta
- 500 grams ground chicken
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1/4 cup fresh parsley, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons olive oil, for grilling

- 1 cup plain yogurt
- 2 tablespoons freshly squeezed lemon juice
- Pinch of salt
- Prepare the Kofta Mixture: In a large bowl, combine the ground chicken, finely chopped onion, minced garlic, fresh parsley, ground cumin, ground coriander, salt, and ground black pepper. Mix thoroughly until all ingredients are evenly incorporated.
- Shape the Koftas: Form the mixture into small, oval-shaped koftas, about the size of a golf ball, ensuring they are compact to hold their shape during grilling.
- Preheat and Oil the Grill: Preheat your grill to medium-high heat. Brush the grill grates with olive oil to prevent sticking and to add flavor.
