Chicken Mixture

  • 1/2 packet taco seasoning (about 1 tablespoon, adjust to taste)

Casserole Base

  • 11 ounce bag of regular nacho cheese Doritos (about 4 cups)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Mix Ingredients: In a large mixing bowl, combine the cooked chicken, shredded cheddar cheese, cream of chicken soup, milk, sour cream, drained Rotel tomatoes, and taco seasoning. Stir until all ingredients are evenly incorporated.
  3. Layer the Casserole: Grease an 8″x8″ baking dish lightly with cooking spray or butter. Place about 2 cups of Doritos as the first layer on the bottom of the dish. Spoon half of the chicken mixture evenly over the Doritos. Repeat with another layer of about 2 cups of Doritos and then the remaining chicken mixture, ending with the chicken mixture on top.
  4. Add Cheese and Bake: Sprinkle additional shredded cheddar cheese over the top layer of the chicken mixture. Cover the baking dish with foil and bake in the preheated oven for 30-35 minutes or until the casserole is hot and bubbling.
  5. Serve: Remove the casserole from the oven and let it cool for a few minutes before serving. For a crunchier chip texture, an alternative method is to skip adding Doritos inside the casserole, and instead serve the warm chicken mixture spooned over a plate of fresh Doritos chips.
