Cookie Cups
- 1 (15.25 ounce) box Devil’s Food cake mix
- 2 large eggs
- 1/2 cup canola or vegetable oil
- Black food coloring (optional)
Buttercream Filling
- 1 cup unsalted butter (softened)
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1–3 tablespoons milk
- Green food coloring
Decorations
- Round green sprinkles
- Halloween sprinkles
- Candy eyeballs
- Pretzel sticks
- Preheat and Prepare Pans: Preheat your oven to 350°F (177°C) and lightly grease three 12-count mini muffin pans to ensure the cookie cups don’t stick.
- Mix Cookie Dough: In a large bowl, combine the Devil’s Food cake mix, eggs, canola or vegetable oil, and black food coloring if using. Mix well until the batter is fully combined and smooth.
- Form Cookie Cups: Scoop about 1/2 tablespoon of the dough into each mini muffin cup. Flatten the dough gently with your fingers to spread evenly.
- Bake and Shape Cups: Bake the dough for 8-10 minutes, or until the edges are set but the centers remain soft. Upon removing from the oven, immediately press an indentation into each warm cookie with the back of a 1 tablespoon measuring spoon to create a cup shape. Allow the cookie cups to cool completely in the pans.
- Make Buttercream Filling: While the cookie cups cool, beat the softened butter in a medium bowl until creamy. Gradually add powdered sugar, vanilla extract, and salt, mixing until smooth. Add milk gradually until the buttercream reaches a smooth, pipeable consistency. Stir in green food coloring until the desired shade is achieved.
- Fill Cookie Cups: Using a piping bag or spoon, fill each cooled cookie cup with the green buttercream, mimicking a bubbling potion.
- Decorate: Top the buttercream with round green sprinkles, Halloween-themed sprinkles, candy eyeballs, and insert halves of pretzel sticks as stir sticks for an extra festive touch.
- Serve: Arrange the finished cookie cups on a platter and enjoy these fun and spooky treats at your Halloween gathering!
Notes
- For the black food coloring, gel color is recommended to avoid thinning the batter.
- Ensure cookie cups are completely cool before filling to prevent melting the buttercream.
- You can customize the decorations with other Halloween-themed candy and sprinkles.
- If you don’t have mini muffin pans, regular muffin pans can be used but will yield larger cookie cups with longer baking times.
- Store cookie cups in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
