Meat
- 1 ½ lbs (680 g) ground beef
- ½ lb (225 g) ground Italian sausage (optional, for flavor)
Cheese Mixture
- 2 cups whole milk ricotta cheese
- 1 large egg (to bind ricotta)
- 2 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 8–10 slices mozzarella cheese (or provolone) for “noodles”

- Prepare the Meat: In a skillet, melt butter or beef tallow over medium heat. Add ground beef and Italian sausage, cooking until browned and crumbled. Lightly season with sea salt and black pepper if using. Remove from heat and set aside.
- Mix Ricotta Cheese Blend: In a medium bowl, combine whole milk ricotta cheese, one large egg, and half of the grated Parmesan cheese. Stir thoroughly until the mixture is smooth and creamy.
- Preheat Oven: Set the oven to 375°F (190°C) to prepare for baking your lasagna.
- Grease the Baking Dish: Grease a baking dish with butter or beef tallow to prevent sticking and add flavor.
- Assemble Layers: Start by spreading a thin layer of the cooked meat mixture on the bottom of the baking dish. Next, layer mozzarella cheese slices or provolone to simulate noodles. Spread a layer of the ricotta mixture on top, followed by a sprinkle of shredded mozzarella cheese. Repeat these layers until all ingredients are used, finishing with shredded mozzarella and a generous sprinkle of Parmesan cheese on top.
- Bake Covered: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Bake Uncovered: Remove the foil and bake for another 15–20 minutes, or until the top is bubbling and golden brown.
- Cool and Serve: Let the lasagna cool for about 10 minutes to allow layers to set before slicing. Serve warm with an extra sprinkle of Parmesan cheese if desired.
