Ingredients

Scale

Cheese

  • 8 ounces Colby Jack cheese, shredded

Chips

  • 12 ounces tortilla chips (approximately 2/3 of a standard bag, Tostitos brand recommended)

Beef Mixture

  • 1/2 pound lean ground beef
  • 1/2 cup yellow onion, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons taco seasoning
  • 1/4 cup water

Garnishes

  • Sour cream
  • Diced tomatoes
  • Fresh cilantro, chopped

Instructions

  1. Prepare Oven and Bundt Pan: Preheat your oven to 450°F (232°C). Spray a 12-cup bundt pan thoroughly with nonstick cooking spray to ensure easy release of the nachos once baked. Set aside.
  2. Brown the Beef and Aromatics: Place a large skillet over medium-high heat. Add the lean ground beef, diced yellow onion, salt, and black pepper. Cook, stirring occasionally, for 6 to 7 minutes until the beef is browned and no pink remains. Drain any excess fat from the skillet.
  3. Add Seasoning: Return the skillet to medium heat and stir in the taco seasoning and water. Allow this mixture to cook for 2 to 3 minutes, stirring until the water nearly evaporates and the seasoning thoroughly coats the beef. Remove from heat.
  4. Build Layers in Bundt Pan: Layer half of the shredded Colby Jack cheese evenly across the bottom of the prepared bundt pan. Spoon half of the seasoned beef mixture over the cheese. Scatter one-third of the tortilla chips on top of the beef, ensuring an even, not tightly packed layer. Repeat by layering the remaining cheese, then the rest of the beef mixture, and top with another one-third of the tortilla chips.
  5. Bake and Invert: Place the bundt pan in the preheated oven and bake for 10 minutes until the cheese is fully melted and bubbly. Remove from the oven. Cover the pan with a large, heatproof plate, then carefully invert the bundt pan onto the plate to release the nachos. Gently remove the bundt pan, repositioning any melted cheese that may have stuck to the pan back onto the nachos.
  6. Garnish and Serve: Top the inverted nachos with sour cream, diced tomatoes, and freshly chopped cilantro as desired. Serve immediately while warm to maintain the perfect combination of melted cheese and crunchy chips.

Notes

  • Ensure the bundt pan is well-sprayed with nonstick spray to avoid nachos sticking during inversion.
  • Use fresh, crispy tortilla chips for the best texture and flavor.
  • Feel free to add other toppings like jalapeños, olives, or guacamole according to your preference.
  • This dish is best enjoyed immediately as nachos can become soggy if left to sit too long.
  • Use lean ground beef to reduce excess grease and improve the overall healthiness of the dish.
