Ingredients

Scale

Vegetables & Aromatics

  • ¼ cup Butter
  • 4 ounces Onion, finely diced
  • 16 ounces Carrot, finely chopped
  • 4 ounces Celery, finely chopped
  • 2 cloves Garlic, finely minced

Seasonings & Broth

  • ½ teaspoon Salt
  • ¼ teaspoon Pepper
  • 1 teaspoon Thyme, finely chopped
  • 5 cups Chicken broth
  • 2 tablespoons Bisquick (for thickening)

Chicken

  • 16 ounces Rotisserie chicken, shredded

Dumplings

  • 2 cups Bisquick
  • ⅔ cup Whole milk

Instructions

  1. Heat butter and sauté vegetables: Place butter in a large pot or Dutch oven and heat over medium-high heat until melted. Add the finely diced onion, chopped carrot, and chopped celery, cooking for 5-7 minutes until softened.
  2. Add garlic and seasonings: Stir in the minced garlic, chopped thyme, salt, and pepper, cooking for an additional 1 minute to release the aromas.
  3. Add Bisquick for thickening: Sprinkle 2 tablespoons of Bisquick over the vegetable mixture and stir well to combine it with the softened vegetables.
  4. Add chicken broth and whisk: Slowly pour in the 5 cups of chicken broth while continuously whisking to prevent lumps from forming, creating a smooth broth base.
  5. Add shredded chicken and bring to boil: Mix in the shredded rotisserie chicken and continue cooking until the broth comes to a boil.
  6. Prepare dumpling dough: In a large bowl, combine 2 cups of Bisquick with ⅔ cup of whole milk. Stir until a dough forms that can be spooned onto the soup.
  7. Add dumplings to boiling broth: Once the broth is boiling, drop spoonfuls of the dumpling dough on top of the soup surface.
  8. Cook dumplings covered: Place a lid on the pot and reduce the heat to medium-low. Let the dumplings cook covered for 10 minutes to steam through.
  9. Finish cooking dumplings uncovered: Remove the lid and continue cooking for another 10 minutes, allowing the dumplings to firm up and cook fully.
  10. Serve hot: Once the dumplings are cooked through, ladle the chicken and dumplings into bowls and serve immediately for a warm, hearty meal.

Notes

  • Use rotisserie chicken for convenience and extra flavor.
  • Bisquick acts both as a thickener for the broth and the base for the dumplings.
  • Make sure to whisk the broth thoroughly after adding Bisquick to avoid lumps.
  • You can substitute fresh thyme with ½ teaspoon dried thyme if unavailable.
  • For a lower-fat option, substitute butter with olive oil and whole milk with 2% milk.
