Ingredients

Scale

Meat and Vegetables

  • 2 lbs beef, cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped

Spices and Seasonings

  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • Salt to taste

Other Ingredients

  • 1 can coconut milk (approximately 13.5 oz)
  • 2 tbsp vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Heat oil: Heat 2 tablespoons of vegetable oil in a large pot over medium heat until hot.
  2. Sauté onions: Add the chopped onions to the pot and sauté until they become translucent, about 5 minutes.
  3. Add garlic and ginger: Stir in the minced garlic and grated ginger and cook for 1 minute until fragrant.
  4. Brown beef: Add the cubed beef to the pot and cook, stirring occasionally, until all sides are browned.
  5. Cook tomatoes: Stir in the chopped tomatoes and cook until they soften, which should take about 5 minutes.
  6. Add spices: Mix in the curry powder, cumin, coriander, and turmeric evenly with the beef and vegetables.
  7. Add coconut milk: Pour in the coconut milk and stir to combine, bringing the mixture to a gentle simmer.
  8. Simmer beef: Cover the pot and let the curry cook on low heat for 1.5 to 2 hours, or until the beef is tender and the flavors have melded together.
  9. Season: Add salt according to your taste and stir well.
  10. Garnish and serve: Remove from heat, garnish with fresh cilantro leaves, and serve hot with your choice of rice or bread.

Notes

  • For extra heat, add diced chili peppers or a pinch of cayenne pepper with the spices.
  • You can substitute beef with lamb or chicken for variation in flavor.
  • Serve with steamed basmati rice or naan bread to soak up the delicious sauce.
  • Leftover curry tastes even better the next day as flavors continue to develop.
  • If you prefer a thicker curry, simmer uncovered for the last 20-30 minutes to reduce the sauce.
