Instructions

  1. Prepare the sauce: In a large skillet over low heat, melt the butter and whisk in brown sugar, cinnamon, nutmeg, sea salt, and allspice. Stir continuously as the butter melts and the mixture becomes a smooth sauce, about 3-4 minutes.
  2. Add bananas and rum extract: Gently fold the sliced bananas into the sauce, then stir in the rum extract. Cook on low heat until the bananas soften and become tender, about 2-3 minutes.
  3. Flambé with dark rum (optional): If using dark rum instead of rum extract, remove the skillet from the heat before adding rum. Light the rum carefully with a long lighter to flambé. Allow the flames to subside after a few minutes before returning to serve.
  4. Serve: Spoon the warm bananas foster over bowls of vanilla ice cream. Garnish with roughly crushed Nilla wafer cookies if desired.
