Ingredients

Scale

Dry Ingredients

  • 2¼ cups all-purpose flour
  • 1½ teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground allspice
  • ⅛ teaspoon ground cloves

Wet Ingredients

  • ⅔ cup vegetable oil
  • 2 large eggs, room temperature
  • ¾ cup brown sugar (light or dark), packed
  • ¾ cup granulated sugar
  • ½ cup sour cream, room temperature
  • 1 teaspoon vanilla extract
  • 1½ cups grated apples (23 large, skin-on optional)

Icing

  • ¼ cup salted butter
  • ½ cup dark brown sugar, packed
  • 2 tablespoons heavy cream
  • ½ teaspoon vanilla extract
  • 1 cup powdered sugar, sifted

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and lightly dust it with flour to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together all-purpose flour, baking soda, salt, cinnamon, ginger, nutmeg, allspice, and cloves until evenly combined.
  3. Combine Wet Ingredients: In a separate bowl, whisk vegetable oil, eggs, brown sugar, granulated sugar, sour cream, and vanilla extract until the mixture is smooth and homogeneous.
  4. Blend Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, stirring gently just until combined. Avoid overmixing to keep the cake light.
  5. Fold in Apples: Carefully fold in the grated apples, ensuring even distribution throughout the batter.
  6. Bake the Cake: Pour the batter into the prepared pan. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven.
  7. Cool the Cake: Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before icing.
  8. Prepare the Icing: In a saucepan over medium heat, melt butter and brown sugar together, stirring until combined. Add heavy cream and vanilla extract, stirring and bringing the mixture to a gentle simmer. Remove from heat and whisk in sifted powdered sugar until smooth and creamy.
  9. Ice the Cake: Pour the warm icing over the cooled cake, spreading it evenly with a spatula. Allow the icing to set before slicing and serving.

Notes

  • Using freshly grated apples with skin on adds extra texture and flavor but can be peeled if preferred.
  • Ensure eggs and sour cream are at room temperature for better batter consistency.
  • Adjust the spices to taste; you can add more cinnamon or reduce cloves if desired.
  • The cake is best served at room temperature and can be stored covered at room temperature for 2 days or refrigerated up to 5 days.
  • For a dairy-free variation, substitute sour cream with coconut yogurt and use a non-dairy butter alternative for the icing.
